Russian Tea Cakes















I made these to give to my boyfriend Tim's family for Christmas. I first gave it to them two Christmases ago, and I kept getting requests for more. It naturally became tradition to keep baking these dense powdery cookies for Christmas.


Russian Tea Cakes
from allrecipes

Ingredients:
1 cup butter
1 teaspoon vanilla extract
6 tablespoons confectioners' sugar
2 cups all-purpose flour
1 cup chopped walnuts
1/3 cup confectioners' sugar for decoration

Directions:
Preheat oven to 350 degrees F.
In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet.
Bake for 12 minutes in the preheated oven. When cool, roll in remaining confectioners' sugar. Cookies may be rolled in sugar a second time.

Yum! I made them for Nate's birthday (along w/ chocolate chip cookies, spritz cookies, and a banana cream pie). Very tasty; thanks!

BTW -- can you post the recipe for the spice cupcakes you made for Nat's birthday last November? They were cute (w/ little pumpkins on top) and soooooooooo good. Thanks!

I adapted the pumpkin cupcake recipe from cupcakeblog: http://cupcakeblog.com/index.php/2006/10/fresh-pumpkin-cupcakes-with-white-chocolate-chunks-and-cream-cheese-frosting/, but unfortunately, I don't recall what I changed exactly. I know I omitted the white chocolate, but not sure what else. Hope that helps!
